Sense of taste

We often have memorable smells – like toast, or coffee etc. But memorable taste – that’s much harder to define. Maybe a favourite cheese, or wine? It’s because taste is split up into 4 or 5 different subtypes – sweet, salt, bitter, sour and umami (whatever that is), so any taste is a mixture of these basic building blocks. Smell actually accounts for 70% of taste, that’s why if your nose is blocked, everything you eat tastes of cardboard. In fact if you were to cut both main taste nerves – the chordae tympani, you still would have a perfectly good sense of taste.
