Potatoes and Pregnancy: A Recipe for Diabetes?

french-friesThe potato is a global product and the popularity is borne out of the potato being a hardy, nutritious crop that can thrive in many climates. The potato contains a wealth of caloric fuel since it is starchy. It also contains a sizeable amount of healthy compounds such as vitamin C, B6, riboflavin, folate, thiamin, niacin, magnesium, phosphorus, iron and zinc.

A new study has found a link between the increase in dietary portion of potatoes and the heightened risk of gestational diabetes.  The study undertaken at the Eunice Kennedy Shriver National Institute of Child Health and Human Development in Rockville indicated that higher potato consumption before pregnancy was linked to an increased risk of gestational diabetes.
